Harvest

Grapes are harvested, to 25 Kg boxes, at its optimal ripeness; intending to show a vigorous maturity, leading to higher aromatic and polyphenolic concentrations.

Vinification

The grapes are trodden by foot in lagares in the cellar, where alcoholic fermentation begins. Fermentation is interrupted by the addition of brandy and the wines are then moved for ageing in oak according to the profile desired for each wine.
